Tasty Pizza! You’ll never know this is vegan

We’re so lucky to have an amazing year-round farm stand in our little town, so we have constant access to US grown, and often organic produce!  Another bonus, they have a bakery.  My absolute favorite item getting pumped out of the bakery is the vegan whole wheat pizza dough.  If you top your pizza with enough amazing veggies, you’ll never notice the lack of cheese!  This pizza has kale, green onion, Greek olives, artichoke hearts, red pepper, mushrooms, and locally made pizza sauce.

The trick to putting kale on a pizza is to reduce it to get all the water out before you put it on, or else your pizza will be extremely soggy. (Do this with spinach, chard, collards, and any other green you might put on your pizza)  Just wash it, but don’t dry it too thoroughly, and then toss it in a skillet with a bit of olive oil, and cook it until it’s reduced by about 3/4 or half.  It doesn’t need to be exact, just get some water out so it won’t sog-ify your pizza.

I rolled my pizza out to the size of my pizza stone and pre-baked it for 10 minutes in a 350 degree oven.  Then I took it out, topped it with sauce and veggies and cooked it for about 10 minutes more at 400 degrees.  Keep an eye on your pizza, you might have different cooking times.

When I’m feeling crazy, I’ll top my pizza with little daiya brand fake cheese.  It’s the tastiest I’ve found.  And don’t get turned off by the price (It’s about $5 for 8 ounces, shredded) because a little goes a long way.

    Great recipe! Kale on pizza is delicious! Thanks for the great tips, it’s so hard to find good vegan pizza recipes. I can’t wait to make it!
